Nicholas

In episode 1, Nicholas is the one who invited Hans to Izakaya Nobu. Unlike the cautious Hans, who worries that the glass doors and glassware make it seem like a high-end establishment, Nicholas is the type who just goes ahead and does whatever he wants. On "Kiss Day," all the customers mistakenly thought it was "Kiss Day," but this was because they had only heard it as "Kiss Day" from Nicholas, and it seems that even among the guards, he was the most frequent of the regulars and was the first to learn about "Kiss Day."

Speaking of Hans, the oden he ate in episode 1 was memorable! He started with the daikon radish and praised the oden highly. When he saw the Kartoffel (potatoes) in the oden, which he doesn't particularly like, he stopped eating, but he was deeply impressed by the difference in taste. He praised it as something completely different, and associated oden with Odin from Norse mythology. After that, he seems to have developed a love for potato dishes such as taro.
Berthold
As the commander of the demon company in the ancient city of Aiteiria, he is a strict man who disciplines Nikolaus and Hans. His swordsmanship on the battlefield was so impressive that he was feared as a "demon," but his great-grandfather had told him many terrifying stories about squid, and he had a deep fear of them. However, after his boss explained to him that squids are actually small creatures, he overcame his fear. He then devoured various squid dishes with gusto.
His favorite food is fried chicken.

In the ancient city of Aiteiria, the only chicken they could eat was old hens that no longer lay eggs. On his first visit to Izakaya Nobu, Berthold ordered a "chicken dish" to test the chef's skills, but instead was served fried young chicken! Since then, Berthold has become obsessed with fried young chicken. He particularly enjoys salted fried chicken, and he and Nikolaus often argue over whether salt or soy sauce is better.

The reason Berthold was worried about the squid was because of his marriage to Hermina. In fact, she was the daughter of a squid fisherman. A skilled tax collector, he always looks grumpy. He is characterized by his monocle, and his reason for coming to Nobu was to collect taxes. However, he was deeply moved by the food Shinobu served him there. Until then, he had been working jobs that earned him the hatred of others in order to line his own pockets, but he decided to take this opportunity to quit such work altogether.

Neapolitan is Geanort's favorite food and is synonymous with it! It just so happens that Shinobu has made it as a meal for the staff while the chef is away, and she raves about the changes in flavor that occur as she adds powdered cheese and Tabasco in succession. It's so delicious that it even changes her outlook on life. Towards the end of the story, she is even more moved when she eats the Neapolitan pasta made by the chef, and becomes uncharacteristically excited when he says he makes it anytime.
Ignaz & Kamil
Both are merchants with the Eisenschmidt Trading Company, and Ignaz is Kamil's brother-in-law. Worried that his brother-in-law's friends call him "Coward Kamil," he takes him to Izakaya Nobu and tries to get him to eat raw fish. He is aware that raw fish is dangerous and actually intended to stop him before eating it, but seeing Kamil eating it with relish, he orders some himself. It seems that he has visited the restaurant several times since then.

There are many dishes that use raw fish, but Ignaz was particularly impressed by the seafood bowl! The bowl is generously piled high with a variety of seafood, and the raw fish, which I had previously thought was dangerous to eat, is so delicious that I find myself eating several kinds at once. In the story, he is a deacon who has recently been appointed to his post. He's an old, uptight man, and as a priest he seems to be careful about his alcohol and food, but in fact he's a big drinker. He comes to Izakaya Nobu when there are few customers and drinks cold sake. His rank is low, that of a deacon, but that's only because he likes alcohol; in reality he seems to be quite a capable man.

Etovin's meal at Izakaya Nobu is almost always the same: cold sake and sake kasu. Sake kasu is a salted fish made from dried sardines, and drinking cold sake with it is Etovin's favorite pastime. He also seems to enjoy "snacks" that go well with cold sake, such as marinated firefly squid. Incidentally, he seems to feel awkward about being a deacon, as he hides his face when he senses people looking at him.

A skilled glass craftsman and Hans' father. When he heard that Hans had broken a mug from the bar, he made two mugs himself, as if to say, "I'll get you back twice as much!" He has a craftsman's spirit and can be a bit rough in his speech, but he's a very good man at heart. When he heard that Izakaya Nobu might be shut down, he even went so far as to lobby the opposing council members.

Lorenz absolutely loves raw bacon. He says anything that pairs well with raw bacon is delicious, but thick-cut bacon seems to be his favorite. When he offered me eel, I thought "eel tastes bad" and declined, saying "I have this thick-cut bacon." ...But! He later discovers the deliciousness of eel and becomes a huge fan (lol).

Holger is a blacksmith guildmaster. As a result, he loves the food served at Izakaya Nobu, but is even more fascinated by the incredibly sharp knives used by the chef. He becomes so fascinated by the knives, not only because of their incredible shine but also because of how sharp they are when cutting tuna sashimi, that he even starts talking enthusiastically about their quality to his young daughter, Eva. In the end, Eva tells him, "Without those, the chef wouldn't be able to make sashimi."

Horuga's favorite pastime is drinking cold sake with tuna sashimi, cut by the chef with a knife he admires. He eats tuna with his hands, a wild style, without using chopsticks. Incidentally, it was Gerenaut who introduced Holger to Izakaya Nobu, but unfortunately Lorenz, with whom he has a bitter rivalry, showed up on the same day, and the situation became tense... but it seems that the closer they are to fighting, the closer they are to each other.

A 30-year-old aristocrat and count of Badenburg, but with a hard life. After that, he also brought his uncle, the former emperor, to Izakaya Nobu.

Hirudegarudo's Favorite Food is Surprisingly Tofu Dishes

To fulfill Hirudegarudo's unreasonable request, the chefs prepared a tofu dish. They set up a stove in front of the two of them and added tofu and vegetables right in front of them, making even Caldo excited. Once the dish is ready, the sauce is poured over it to complete the thick-boiled tofu. It's been a while since I've had such a piping hot dish, and I was so satisfied that I finished it all, even eating the leech and caldo.
The Super Tsundere Hildegard

White Fox

The White Fox is the one who connected the entrance to Izakaya Nobu to another world, and is a messenger of the gods enshrined at Inari Shrine. While he's not exactly a regular, there is a Shinto altar displayed inside Nobu, so it's no exaggeration to say he's in Nobu every day. Incidentally, she once visited the restaurant in human form just before closing time. At the time, she was introduced as a "mysterious woman."

Fried tofu is always kept on the family altar. Naturally, the white fox who came to the restaurant requested fried tofu. The chef prepares a dish using fried tofu, a dish using taro, and cold sake. Since he usually drinks the sake that is offered, it is lukewarm and infested with mosquito larvae... so he is happy to drink the cold sake. The young master of the naval guild "Kinyanagi no Kobune." He quickly took over after the death of his predecessor, but he proved unreliable and ended up fighting with Godhart, the same master of one of the three major water transport guilds, over territory... Unlike in the original work, he is portrayed as a rather timid young man in the anime. He is also the person who started the trend of eels in the ancient city of Aiteiria.

The master of the water transport guild "Water Dragon's Scales." As the master of the largest guild in the ancient city of Aiteiria, he has a loud voice and a bold attitude. At first, he vehemently opposed Reinhold's proposal to use fishing rights to sell the eel, but was surprised by the deliciousness of the eel and accepted his proposal. Since then, she has continued to be captivated by eels, frequently eating the eel bento at Izakaya Nobu.
Eleonora
She is the master of the water transport guild "Bird Girl's Boat Song" and the only female among the three major guild masters. She just watches the two of them arguing with a bothered look on her face, but her attitude changes completely when the eel appears. She starts asking to have a say in the fishing rights dispute. In the original work, she is portrayed as shy around men, so despite her appearance, she seems to be a very naive woman.

Damien visits Izakaya Nobu many times as an uninvited guest. While he's never shown touching the food, he repeatedly plots to undermine Izakaya Nobu. He was a servant of small stature but had an incomparably larger attitude, and when he was refused exclusive use of the place, he would force an intimidating man to stand at the entrance and give him exclusive use of the place.
His crimes are discovered, and he tries to escape, but in the end...

Backeshof tried to corner Nobu, who was carrying a lager, but Gernot's quick thinking put him in a difficult position. Damien tries to abandon Backeshof and escape, but is caught by guards waiting at the entrance and arrested. Incidentally, an even more tragic ending awaits in the original novel.
